One common period pavilion design is roughly conical, with a center pole. It seems clear from pictures that at least some such pavilions did not have side poles.
Perhaps I should have titled this Medieval Camping Resources, because it includes plans, links and articles on tents, furniture, food, costuming, The Society for Creative Anachronism, and other period interests.
